Easy Homemade Baked Popcorn Chicken
- 2 boneless skinless chicken breasts cut into bite-sized pieces
- 1 cup bread crumbs
- 1/2 cup grated parmesan cheese
- 1 tsp garlic powder
- 1 tsp paprika
- 1/2 tsp sea salt
- 1/2 tsp black pepper
- 2 eggs- beaten
- 2 tbsp olive oil
Preheat oven to 400°F and line a sheet pan with parchment paper or lightly grease with cooking spray.In a small bowl, whisk together eggs.In a separate bowl, mix bread crumbs, Parmesan cheese, garlic powder, paprika, salt, and pepper.Dip each piece of chicken into the egg mixture, then coat with the breadcrumb mixture.Arrange the coated popcorn chicken bites in a single layer on the prepared baking sheets.Drizzle lightly with olive oil for extra crispiness.Bake for 18-20 minutes, flipping halfway through, until golden brown and cooked through.Remove from oven and transfer to a paper towel lined plate.Serve warm with your favorite dipping sauce!
Homemade Honey Mustard Dip:
